Raw
Raw food relates to the process of preparing food for consumption. People who consume raw food are generally doing so for perceived health benefits. Cross contamination safety is not a concern unless raw meats and fish are being served.
Raw food is usually Vegan. When in a restaurant setting, the presumption will be that Raw food is Vegan. If you want to offer a Raw dish that contains animal products including honey, you should clearly mark this on your menu.
Raw food does not mean unprocessed! There are many ways to prepare Raw food to add flavour and texture. This includes dehydrating/drying, gently warming, blending, juicing and sprouting.
People on a Raw diet are looking for more than just bliss balls or coconut fat loaded sweets. These can be repetitive and too rich to eat on a regular basis.
Remember that salads are only Raw if their dressings are too. If you must use vinegar, go for Apple Cider Vinegar.
When selecting dried fruits make sure they don’t contain additives like sulphates or sugars.
